Why'd you want to work with us, and what's your favourite part about it?
"I decided to come work with Chef Bill and his team because I believe in his philosophy. He has always been a friend, and a mentor. He leads with strong principles, takes care of his people and possesses rare qualities as a boss. He continually pushes me to challenge myself and learn new skills.
I like working with the team at Truck-Side because it's like a tight knit family. We all take pride in what we do. We cook and serve from the heart. I love working with great local products, and serving up amazing food."
Tell us a little about you, and your background.
"Sure, I met Chef Bill at the 2010 Winter Olympics in Whistler, where we served athletes, coaches, trainers, volunteers, police and Canadian Armed Forces personnel, who were doing security. At the height of the Games we were preparing over 12,000 meals a day, over 320,000 in total...
I completed my red seal while at the Fairmont Winnipeg, in Manitoba.
I worked as executive chef at Luxe Bistro, a steakhouse/bistro in Ottawa's ByWard market. Then as chef de cuisine at the prestigious four diamond rated Brookstreet Hotel, and held the four diamond rating while I was there.
From there I spent a year and a half as pastry chef at the Michelin star rated restaurant; The Yorke Arms, in Northern England. This was a huge challenge because I didn't have any previous pastry training.
